Ingredients:
- Carrots — 4–5 medium carrots
- Lemon or lime — 1 (optional, for flavor and freshness)
- Olive oil — 1 teaspoon (optional, to help with beta-carotene absorption)
- Fresh ginger — 1 small piece (optional, for a little heat)
How to make it:
- Wash the carrots, lemon or lime, and ginger thoroughly. You can leave the carrots unpeeled if you prefer, provided they have been cleaned well.
- Choose lemon or lime according to your preference for a fresh, tart flavor.
- If using olive oil, stir it into the finished juice. A little dietary fat can help the body absorb beta-carotene.
- Use a juicer to extract juice from the ingredients. Add the olive oil if you have not already done so.
- Serve soon after preparation for the freshest flavor.
The nutritional benefits of carrot juice
Carrot juice contains vitamins and minerals, particularly beta-carotene. The body can convert beta-carotene into vitamin A, which supports normal vision and healthy skin; extra carrot juice does not give you better-than-normal eyesight.
